Simnel spiced cookies, makes 30

Taste the season with Sophie Conran's lightly spiced cookies, then decorate witha rainbow of jolly Easter-themed decorations. They're perfect for a family baking session – followed by a tasty afternoon tea.


■ 150g butter, cubed
■ 150g caster sugar
■ 400g plain flour
■ 2 tbsp ground ginger
■ ¼ tsp ground nutmeg
■ ½ tsp cinnamon
■ 100ml water
■ 2 tbsp golden syrup
■ Icing, assorted sprinkles and Easter decorations


Preheat the oven to 200°C (Gas Mark 6). Place the butter, sugar, flour and spices in a food processor. Whizz until the mixture resembles breadcrumbs.

Heat the water and golden syrup in a small pan until the syrup has melted. Add to the flour mixture and whizz again until smooth. Add a little more flour if sticky.

Divide into two balls and place on a floured surface. Grease a large baking tray, roll out the dough and cut into shapes. Place cookies on the tray and bake for 10 minutes. Cool before decorating.
