Corned Beef Hash

Try this Corned Beef Hash recipe and serve with a fried egg

Serves 4


3 baking potatoes, peeled and chopped into 2cm (3/4in) cubes
1 tbsp of olive oil
1 onion, chopped
200g (7oz) tin of corned beef, cut into 2cm (3/4in) cubes
1 egg


Boil the potatoes in salted water until they are tender. Add the olive oil to a large frying pan then gently fry the onion, stirring often. When the onion becomes translucent, add the cooked potatoes and cubed corned beef to the pan. Stir to combine and pat down with a wooden spoon until a cake is formed. Fry until crisp and golden on the bottom. Stir, and pat into a cake again, and repeat until you have a solid cake that you can cut into slices. Serve with a fried egg on top.
