Celebrate Pancake Day with this recipe from celebrity recipe author, Fay Ripley
Makes 8 pancakes
150g (51/2oz) white spelt or plain flour1 tsp baking powder60g (2 1/4oz) caster sugar1 egg150ml ( 1/4 pint) milk250g (9oz) blueberriesA big knob of butterAssorted fruit, sliced banana and honey or crispy bacon to serve
Sift the flour and baking powder into a bowl. Add the sugar. Whisk together the egg and milk, then pour into the dry ingredients. Mix and finally add the blueberries. Pop in the fridge for half an hour, if you have time.Melt the butter in a large frying pan. When it starts to bubble, plop a tablespoon of batter per pancake in the pan.
Fry for two minutes on each side or until golden. Serve with lots of fruit, sliced banana and honey or crispy bacon and maple syrup.
