Picnic ideas: Cheese Straws
A savoury party classic that's perfect for children's picnics too
Great to give to children and toddlers who like to let the pastry melt rather than chew, chew, chew.
- 75g lard, chilled and cubed
- 75g butter, chilled and cubed
- 225g plain flour
- 100g grated Parmesan cheese
- ½ tsp mustard powder
- A pinch of grated nutmeg
- 1–2 tbsp very cold water
- 1 egg, beaten
- Sea salt flakes
Put the lard, butter and flour in a mixing bowl and rub together until crumbly. Add 75g of the Parmesan, mustard powder, nutmeg and water and mix together to form a dough. Bring mixture together, wrap in cling film and refrigerate for 30 minutes.
Preheat oven to 200°C (Gas Mark 6). Roll the chilled pastry out on a lightly floured surface into a rectangle about 5mm thick. Brush beaten egg over the sheet of pastry and sprinkle with the remaining Parmesan and a pinch of salt.
Cut the pastry into strips 1cm wide and 10cm long and arrange on a baking sheet. Pop in preheated oven for 15 minutes, until puffed up and golden. Turn oven off, open the door and leave straws in oven for a further ten minutes so they crisp up. Serve with a creamy yoghurt and chive dip
